I don’t know about you, but the heat makes me soooo sleepy. Since I try not to have more than 1 cup of coffee per day, my new favorite thing has been iced coffee popsicles. I know I’m pretty much cheating on the 1 cup thing, but the mini dose of coffee is the perfect guilt-free afternoon pick-me-up without making me too wired to go to sleep. I also am a splenda addict, so the recipe below contains it. Feel free to substitute your favorite kind of zero calorie sweetener. If you are not worried about calories, simple syrup mixes with cold coffee the best. You can also use different kinds of milk if nonfat isn’t your thing. Just know the total calories will increase slightly.
10 Calorie Iced Coffee Popsicles
- 12 oz cold coffee
- 4 oz nonfat milk
- 2 splenda (optional)
- Mix all of the ingredients together in a cup until the sugar has dissolved.
- Pour into your popsicle molds (4oz each).
- Freeze for at least three hours.
- Once frozen, remove from the freezer.
