I’ve been on a tomato kick lately, and in my opinion, nothing goes better with tomatoes than mozzarella cheese (did I mention I love cheese?). This Mini Heirloom Tomato and Mozzarella salad is a quick and easy salad that you can serve as a side dish or as a main course. I would recommend adding meat to it (such as chicken), if you are going to go the main course route. When planning this meal, I wasn’t sure what dressing to put on it. I happened to come across A Pinch of Yum’s Magic Green Sauce, and it sounded like the perfect compliment to my salad. It turned out I only had about half the ingredients that are listed in the recipe, so I improvised and it turned out great. The sauce I made is more like an avocado pesto than anything. If you like Avocado, and if you like Pesto, you will love this.

This salad is low-carb, gluten-free, and vegetarian (unless you add meat to yours). So if you are looking for something healthy, look no further.

Avocado Pesto Dressing:

Avocado Pesto Dressing

Cook Time: 5 minutes

Total Time: 5 minutes

Yield: 1/2 cup

Avocado Pesto Dressing


  • 1 small lime
  • 1/4 c olive oil
  • 1/4 c water
  • 1 c basil
  • 1 avocado
  • 1/4 tsp salt


  • Mix everything together in a food processor until you have the consistency you want.

Mini Heirloom Tomato and Mozzarella Salad:

Yield: 2 side servings, 1 main course serving


  • 1 cup mozzarella balls
  • 1 cup mini heirloom tomatoes, sliced
  • 1 Persian cucumber, sliced

  • In a small bowl, combine all your ingredients with the dressing and serve!
