Happy Thursday! I have been seriously slacking with posting. Thanks to wedding season, I’ve been a bit busy. Last weekend I was in Michigan for probably the best wedding I’ve been to. It was on a lake, and there were fireworks and everything. I’m not sure mine can compare, so I told everyone there who is invited to mine that they are no longer invited…
However, in the spirit of celebration, I came home and stocked up on champagne (or prosecco). I LOVE champagne. I mean, who doesn’t? I even joined a champagne club in Seattle. I still have them ship it to me, but they can’t in the summer because it is too hot to ship 🙁
I had some peaches in my house (per usual) and since I am newly obsessed with making my own frozen treats, I made some 5 minute peach sorbet (I used this recipe and just changed out the mangos for peaches). I used the sorbet to make a Peach Sorbet Bellini. It was so delicious and the perfect treat for an otherwise normal Wednesday night. I’ll probably start making these daily. Or at least until the champagne runs out…
Peach Sorbet Bellini
- 4 oz champagne or prosecco
- 1 small scoop (1 oz) Five Minute Peach Sorbet
- 1 peach slice
- Add your scoop of peach sorbet to a champagne glass.
- Pour champagne (carefully) over the sorbet.
- Add the peach slice to the rim.
