Growing up, my family had a basil plant and I vividly remember my mom harvesting the basil and making a ton of pesto sauce with it before it went bad. If there ever was too much pesto sauce (is that even a thing?), she would portion it out and freeze it for later.
Maybe because of that and maybe not, basil is my favorite herb. I LOVE the smell. Pesto, likewise, is my favorite sauce.
In my opinion, pesto goes with anything and everything. I have already blogged 5 or 6 different recipes with this sauce, so I figured it needed it’s own dedicated post. This is my go-to pesto sauce and one thing I really love about it is that the nuts are interchangeable. I’ve made it with pine nuts, almonds, and walnuts, and all of them taste amazing. If you need ideas for what to put it on, look here. It is especially delicious when spread on bread, pasta, or pizza. Honestly, you can’t go wrong. It takes all of my self control to not just eat it with a spoon.

Perfect Pesto Sauce
- 1 c dry basil
- 2 tbsp Olive Oil
- 1 tbsp lemon juice
- 2 tbsp - 1/4 c water
- 1 garlic clove
- 1/4 c grated Parmesan cheese
- 1/4 c walnuts (or sub pine nuts if you prefer)
- salt to taste
- Throw everything in a food processor and blend until it is the consistency you like. This recipe makes a more chunky sauce. If you want to smooth it out, you can add more water a tsp at a time until it is the consistency you like. Add salt to taste and voila! You're finished.
