We just spotted this wonderful ice cream concept on the @traderjoeslist Instagram feed, where she made the delectable treat using frozen blueberries. And the greatest thing was that it just needed three basic ingredients, so we knew we had to try this cool summer treat, and of course, make it keto!

When preparing this 3-ingredient keto ice cream, keep the following guidelines in mind:

  • Frozen berries from the store work well in this dish, but if berries are in season, you may harvest some wonderful fresh berries and freeze them before using them.
  • With unsweetened almond milk and heavy cream, I got excellent results. Use full heavy cream instead if you want a smoother consistency. Use 100% almond milk for a lighter, less rich ice cream.
  • You may make this dish using a variety of frozen berries that are easy to mash. I used blueberries and raspberries, but strawberries and blackberries would also work well.
  • With the raspberries, I discovered that I needed to use less almond milk/heavy cream. When experimenting with various fruit types, you may want to start with a bit less than the recipe asks for.

The dish is very easy to prepare. All you’ll need are your favorite frozen berries, some milk, and some time to put it all together!

We used blueberries and raspberries in this recipe and liked the results with almond milk, but heavy cream would give it an even creamier texture. SO DELICIOUS!

Berry Keto Ice Cream

A delicious & creamy fruity treat that requires only 3 simple ingredients.

  • 1 cup berries, frozen (blueberry or raspberry works best)
  • 1/4 cup vanilla almond milk, unsweetened
  • 1 quart thick cream
  • 1 teaspoon of keto sweetener (or more) (optional)

Fill a dish or a big cup halfway with frozen blueberries or raspberries (or any other frozen fruit of your preference).

Stir in the almond milk, heavy cream, and (if preferred) keto sweetener. Allow for one minute of rest.

Stir until the mixture has the consistency of ice cream. Divide the mixture into two glasses and enjoy!
