  • 1 tablespoon of oil

Prepare ahead of time:

  • In a mixing dish, combine the atta and the water. Then, toss in the salt and oil with the atta and combine well. Slowly add water and knead a dough. The dough should be a bit firmer than that of Chapathi. Cover the dough and let aside for 20 minutes.

  • Set aside the onions, garlic, green chilis, ginger, and coriander leaves.

Preparation for stuffing consists of the following steps:

  • Sattu should be placed in a bowl. Add the chopped onions, garlic, ginger, green chilies, coriander leaves, ajwain, kalonji, lemon juice, salt, Pickle, and oil after that. Now combine all of the ingredients well. To get the desired consistency, a little amount of water or oil may be added.

Litti’s Evolution:

  • Take the atta dough and roll it into equal-sized balls.

  • Make a cup out of atta or roll it into a circle. Now load it with filling and secure the edges.

  • Repeat the procedure with the remaining Litti.

  • Heat the oil over medium heat, then put the filled dough balls in and deep fry them over the medium heat.

  • The Litti should have a brown hue on both sides. These Litti may be baked in a preheated oven for 20 to 25 minutes.

  • Remove them from the oven and brush them with ghee before turning them over and baking for another 10 minutes or until done.

Chokha preparation:

  • To begin, take an eggplant and a tomato and roast them over a hot heat.

  • Now, grab a potato and put it in the pressure cooker to boil.

  • Peel the eggplant, tomato, and potato skins and mash them with a fork or a potato masher.

  • Add chopped onions, green chilies, garlic, coriander leaves, salt, and oil after that. Now combine the two.

  • Serve the hot Litti with Chokha.
