I’ve been wanting to try making baked squash for a very long time, but I always thought it was a bit too difficult and maybe just not worth the effort. But with the holidays fast approaching, I decided this would be the perfect time to give it a go.
Squash is a great fall or winter vegetable. It is sturdy and filling. It is easy to grow and store. It only needs a few minutes of cooking to be delicious. I use this recipe and cook a large squash for a side dish and another for a main dish, so I like to make extra and freeze them for later.

Making a squash side dish is the epitome of “autumn” cuisine. This easy dish is usually a success, whether you use acorn squash, delicata squash, butternut squash, or any other winter squash type. It’s a vegetable meal I’ve always requested as a child, which testifies to how tasty it is. This autumn, Thanksgiving, or whenever you want it, Baked Squash with Brown Sugar will be on your table!
Squash roasting instructions
Start by preheating your oven to 375 degrees for whichever winter squash type you select. After that, cut the squash in half using a chef’s knife. Remove the seeds with a spoon and throw them away. Drizzle olive oil over the sliced side of the squash and season liberally with salt and pepper. Place the squash halves cut side down on a baking sheet lined with aluminum foil and roast for 45 minutes, or until fork tender and browned around the cut edges. Allow to cool somewhat before handling, then scoop out for mashed squash or eat right out of the shell.
Squash in different ways
Winter squash is a versatile vegetable, but it must be prepared before it can be eaten. Half the squash, remove the seeds, and peel or cut off the skin is another method to cook it. Squash should be cut into cubes and roasted for 25-30 minutes, or until cooked. With the proper tools, winter squash may also be spiralized and formed into noodles or sliced into pasta shapes. What is the definition of a winter squash?
You can’t utilize yellow summer squash or zucchini in the same manner you can butternut or acorn squash since they’re not the same. Here are a few of my favorite winter squash varieties:

- 2 Squash (Acorn)
- 4 tbsp Extra Virgin Olive Oil
- Salt
- Pepper
- 4 tablespoons butter
- 4 TBS SUGAR (BROWN)
Instructions

Preheat the oven to 375 degrees Fahrenheit. Using a big chef’s knife, cut the squash in half. Scoop out all of the seeds and toss them away. Drizzle olive oil over the sliced side of the squash and season liberally with salt and pepper. Place the squash cut side down on a baking sheet coated with aluminum foil.

Roast for 45 minutes, or until squash is fork tender. Remove the dish from the oven.

Carefully place roasted squash onto a plate or bowl, cut side up. Place 1 Tbsp of butter in each well of the squash, followed by 1 Tbsp of brown sugar in each (though if you go over 1 Tbsp, your secret is safe with me!) Let butter melt, then serve and enjoy!
Notes
Other squash types may be used in this recipe, however the baking time may need to be adjusted depending on the size of the squash.
