It’s practically summer (finally), and to celebrate, I made some boozy popsicles. I had this blackberry gin cocktail a while back and it was so good, that it changed how I felt about gin (which I previously didn’t like). I have been making a greater effort lately at making cocktails and trying to build out my “bar” (currently just a few bottles on my counter). I recreated this drink at home and loved it, and thought it would be even better if it was frozen. This boozy popsicle is so easy to make and the only tool you need is a Popsicle mold. There are only 3 ingredients, and it takes just a few hours to freeze. It is the perfect treat on a hot day.
Note: You can taste the alcohol in these popsicles when they are made this way. It isn’t strong, but it is there. If you are looking to completely get rid of the alcoholic taste, I would recommend using a lemon soda (I used San Pellegrino Limonata). It masks the gin, and while sweet, isn’t TOO sweet.
Boozy Blackberry Popsicle
- 1 tsp blackberry jam
- 1 tbsp gin
- ~3 oz soda water (depends on your Popsicle mold)
- Pour the gin & blackberry jam in to the Popsicle mold and mix together. Pour the soda water in to the mold and gently combine (mixing too aggressively will cause it to spill over).
- Put the mold lid on & freeze for at least 4 hours. If you don't have a lid, you can use a popsicle stick and foil. Just Cover the top with foil and poke the Popsicle stick through.
