Fresh Baby Spinach Spinach Dip
Summary: The little amount of additional work required to make this FRESH version of the widely-loved dip from the back of the veggie soup mix box is definitely worth it! The final product is a flavor-packed dip with a delicate texture. This dip goes well with sliced baguettes or crackers of any kind. Because this dip is very delicious, I suggest crackers with mild seasonings so that the dip doesn’t get lost. Enjoy!
- 2 tblsp. extra virgin olive oil
- 1/2 cup carrots, finely shredded
- 3-4 garlic cloves (medium) (finely chopped)
- 2 Teaspoons Onion (minced)
- 1 teaspoon Kosher salt (or more, according to preference)
- 1/2 teaspoon coarsely ground black pepper (or more, to taste)
- Baby spinach, 20 oz. (washed, of course!)
- 1 quart of sour cream
- 1 cup mayonnaise
- 2 tblsp. Worcestershire sauce
- 1 tsp freshly squeezed lemon juice
This tasty spinach dip is based on a recipe I discovered on Chow.com. I’ve been making spinach dip for years, but the difference between using fresh baby spinach instead of frozen, chopped spinach is incredible! If you have a few additional minutes, I strongly advise you to use fresh.
|In a skillet, heat the oil over medium heat (one with straight sides is going to accommodate the ingredients better)|
|Combine the carrots, onion, garlic, salt, and pepper in a large mixing bowl.|
|Cook until the veggies are tender. The onions and garlic will have a wonderful aroma!|
|Place the mixture in a large mixing basin and put it aside.|
|Add half of the spinach to the pan and season with salt and pepper.|
|Add the remaining spinach and season with a pinch of salt and pepper after the spinach has begun to wilt.|
|Pour the spinach into a colander to drain and cool as soon as it has wilted.|
|Squeeze off as much liquid as you can when the spinach is cold enough to handle. I do it in tiny batches.|
|Add the spinach to the carrot/onion/garlic combination, finely chopped. Stir to break up any spinach clumps.|
|Combine the sour cream, mayonnaise, Worcestershire sauce, and lemon juice in a mixing bowl.|
|Cover and chill until the flavors “marry.”|
|Before serving, taste the dish and adjust the spices.|
