The final product is a delectable dip with a delicate texture and plenty of flavor. This spinach dip is delicious with sliced baguettes or crackers of any kind. Because this dip is very delicious, I suggest using crackers with mild spices so that the dip can shine. Carr’s water crackers are outstanding! Hollow up a round loaf of sourdough bread and fill with the dip for a lovely display.

Ingredients

  • 2 tblsp. extra virgin olive oil
  • 1/2 cup carrots, finely shredded
  • 3-4 garlic cloves (medium) (finely chopped)
  • 2 Teaspoons Onion (minced)
  • 1 teaspoon Kosher salt (or more, according to preference)
  • 1/2 teaspoon coarsely ground black pepper (or more, to taste)
  • Baby spinach, 20 oz. (washed, of course!)
  • 1 quart of sour cream
  • 1 cup mayonnaise
  • 2 tblsp. Worcestershire sauce
  • 1 tsp freshly squeezed lemon juice

This tasty spinach dip is based on a recipe I discovered on Chow.com. I’ve been making spinach dip for years, but the difference between using fresh baby spinach instead of frozen, chopped spinach is incredible! If you have a few additional minutes, I strongly advise you to use fresh.

Directions

Step 1
In a skillet, heat the oil over medium heat (one with straight sides is going to accommodate the ingredients better)
Step 2
Combine the carrots, onion, garlic, salt, and pepper in a large mixing bowl.
Step 3
Cook until the veggies are tender. The onions and garlic will have a wonderful aroma!
Step 4
Place the mixture in a large mixing basin and put it aside.
Step 5
Add half of the spinach to the pan and season with salt and pepper.
Step 6
Add the remaining spinach and season with a pinch of salt and pepper after the spinach has begun to wilt.
Step 7
Pour the spinach into a colander to drain and cool as soon as it has wilted.
Step 8
Squeeze off as much liquid as you can when the spinach is cold enough to handle. I do it in tiny batches.
Step 9
Add the spinach to the carrot/onion/garlic combination, finely chopped. Stir to break up any spinach clumps.
Step 10
Combine the sour cream, mayonnaise, Worcestershire sauce, and lemon juice in a mixing bowl.
Step 11
Cover and chill until the flavors “marry.”
Step 12
Before serving, taste the dish and adjust the spices.
