Chocolate Cupcakes w/Peanut Butter Buttercream Frosting

Prep Time: 15 minutes

Cook Time: 13 minutes

Yield: 24 mini cupcakes

Chocolate Cupcakes w/Peanut Butter Buttercream Frosting

Ingredients

  • 2 tbsp unsalted butter (melted)
  • 2 tbsp vegetable oil
  • 1/4 c water
  • 1/2 c flour
  • 1/2 c granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • Dash of salt
  • 1 egg
  • 1/4 milk
  • 1/2 tsp vanilla
  • 1/2 cup peanut butter chips lightly coated in flour (optional)

Instructions

  • Preheat oven to 350 degrees.
  • Combine the butter, oil and water in a large bowl.
  • Sift the dry ingredients (flour, sugar, cocoa powder, baking soda & salt) in to the liquid mixture.
  • Mix on medium speed until thoroughly combined.
  • Add the egg, milk & vanilla, and continue mixing until egg is full incorporated.
  • Pour in to your pre-lined or greased mini cupcake pan. Fill each cup 3/4 of the way.
  • Sprinkle a few peanut butter chips in to each cup.
  • Bake at 350 for 13-18 minutes.
  • Let cool completely.

Peanut Butter Buttercream Frosting (from Butter Lane

Ingredients: 

  • 1 cup powdered sugar
  • 1/2 stick unsalted butter (softened)
  • 1/2 tsp vanilla
  • 1/2 cup peanut butter
  • 1 tsp milk

Directions:

  1. Using a mixer, blend these ingredients together until the frosting is thick and forms peaks when you pull the mixer out.
  2. Frost the cooled cupcakes.
  3. Enjoy!
