The fresh catfish fillets are marinated in a beer and lime juice combination with a few spicy spices. It’s then dusted with crushed tortilla chips and cornmeal before being baked until flaky and crispy.

Beer Battered Catfish

Catfish cooked in the style of the South, but with a twist! A unique catfish supper that the whole family will enjoy.

  • 4 fresh catfish fillets, each 6 ounces
  • 1 serving of tortilla chips crushed to a fine powder
  • 14 cup cornmeal (yellow)
  • 12 cup beer (light or normal)
  • 14 cup fresh lime juice plus 2 teaspoons
  • 2 teaspoons chopped fresh cilantro
  • 1 seeded and coarsely chopped tiny jalapeño
  • 12 tsp. kosher salt
  • cayenne pepper (1/4 teaspoon)
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cumin powder
  • 4 oz. cubed processed cheese (Velveeta, for example)
  • 14 cup salsa (spicy or mild, as desired)
  1. Mix the beer with 14 cup lime juice, then add the chopped cilantro and jalapeño.

  2. Pour the marinade over the catfish fillets in a shallow dish or glass baking dish. To make sure the fish is thoroughly covered, turn them over. Refrigerate the dish for approximately 30 minutes after covering it.

  3. Preheat the oven to 400 degrees Fahrenheit. Using cooking spray or a little olive oil, coat a baking dish.

  4. Combine cornmeal and crushed tortilla chips in a mixing bowl. Combine the kosher salt, cayenne pepper, chili powder, and powdered cumin in a mixing bowl.

  5. Combine the 2 tablespoons lime juice and the olive oil in a separate shallow dish.

  6. Remove the catfish from the marinade and shake it to remove any remaining marinade. Remove the marinade and toss it out.

  7. Each fish should be dipped in the lime juice and oil combination first, then firmly pressed in the tortilla chip and cornmeal mixture. Place the fillets side by side in the prepared baking dish.

  8. Preheat the oven to 350°F and bake the catfish for 25 to 30 minutes. The entire cooking time will be determined by the thickness of the fillets, so examine the fish after 25 minutes to see whether it flakes readily with a fork.

  9. While the fish is cooking, mix the salsa and cubed cheese in a small pot. Stir the mixture until it is completely melted.

  10. Place 1 fillet on each dinner dish once the fish has done cooking and pour some of the cheese and salsa sauce over each piece. Serve the Beer Battered Catfish while it’s still hot.

 

Food for Thought — If you prefer Mex to Tex, you may heat up the queso by adding minced jalapeño to the melted cheese instead of the marinade. You may also reserve some cilantro to use as a garnish on top of the melted cheese just before serving.

Use any cheese other than Velveeta if you don’t have Velveeta on hand. Cheddar, Monterey Jack, or Cheddar Jack cheese may be chopped and melted in a little amount of milk over a low heat. Stir it often to avoid sticking, then add the salsa.
