Recently, I came across a recipe for Buffalo chicken cauliflower casserole, which sounded intriguing, so I used it as an opportunity to try something a little different. The casserole is baked, so the ingredient list isn’t impressive: cauliflower, ranch dressing, two buffalo chicken breasts, fat-free cream cheese, and tortilla chips. When I cook, I usually attempt to create something that is as nutritious as possible. BUT I don’t do it at the expense of my taste. We all have different tastes, so what I consider to be delectable may not be to your liking. However, I doubt that most people would be turned off by a nutritious meal like this because, well, bacon! Oh, plus there’s gooey cheese… and tasty buffalo sauce! It’s really delectable!
Is cauliflower a low-carb food?
Cauliflower is a fantastic low-carb veggie! It’s very adaptable, and with just 3 grams of carbs per 1 cup serving, it may even be used in ketogenic cookery. Cauliflower’s popularity stems from the fact that it has a texture comparable to potatoes, but without the carbohydrates. It may also be riced and replaced with real rice, lowering the carbohydrate content significantly.
What are the ingredients in buffalo sauce?
Buffalo sauces may be quite different depending on the brand and taste they’re meant for. Hot sauce, vinegar, Worcestershire sauce, and butter are all included in a classic buffalo wing sauce. That butter blends all of the ingredients together and gives it a wonderful, rich taste.
Buffalo Chicken Cauliflower Casserole Ingredients:
To prepare our Buffalo Chicken Cauliflower Casserole, follow these steps:
Preheat the oven to 375 degrees Fahrenheit. Set aside the cauliflower head, which has been chopped into bite-sized florets. Set aside the raw chicken, which has been cut into tiny pieces.
In a large mixing bowl, combine the spice and buffalo sauce. Mix the cauliflower florets with the sauce in a mixing basin until they are uniformly covered.
Place the cauliflower in a baking dish, reserving as much of the sauce as possible in the bowl. Cook the cauliflower for 20 minutes in the oven. While the cauliflower is baking, coat the chicken with the sauce in a large mixing basin.
Remove the dish from the oven after 20 minutes. Distribute the chicken equally on top, then add the cheese, green onions, and bacon. Add another 25 minutes to the baking time.
Remove the dish from the oven and serve!
In the end, this is a keeper of a recipe. Because it’s THAT delicious, it seems like you’re indulging in something you shouldn’t be. However, you soon discover you’re eating a low-carb veggie with a low-carb sauce and a high-protein chicken! It’s satisfying, tasty, and full of interesting tastes. Ingredients
- 18 oz. diced chicken
- Cauliflower Florets, 8 C
- 2 tbsp extra virgin olive oil
- 2 tblsp. salt and pepper
- 1 tablespoon buffalo sauce
- Topping:
- 2 c cheese from Mexico
- 5 ounces cooked and diced bacon
- 1 cup green onions, diced
Instructions

- Preheat the oven to 400 degrees Fahrenheit.
- Set aside the cauliflower and chicken, which should be chopped into bite-size pieces.
- Combine the spices and spicy sauce in a large mixing basin. Stir in the cauliflower florets to coat them.
- Transfer the cauliflower to a 9 x 13 baking dish using a slotted spoon, leaving as much of the buffalo sauce combination as possible behind.
- Preheat the oven to 350°F and bake the cauliflower for 30 minutes, stirring halfway through.
- Add the diced chicken to the dish with the remaining sauce and toss to coat while the cauliflower is boiling. If required, add additional sauce. Allow to marinade for a while.
- Remove the cauliflower from the oven when it is done. Distribute the marinated chicken equally on top.
- Combine the cheese, bacon, and green onions in a separate dish, then top the raw chicken with the cheesy mixture.
- Return the casserole to the oven for 15-18 minutes, or until the chicken is fully cooked and the cheese has melted.
- Serve and have fun!
