Ingredients

  • 1 skinless, boneless chicken breast, cut into 1-inch chunks
  • peeled and deveined 3/4 pound medium/large shrimp (approximately 16), tails removed (if frozen, thawed)
  • fettuccine, 12 oz.
  • 1/2 cup unsalted butter (about 8 tbsp)
  • 2 quarts of thick cream (or half and half)
  • 1 1/2 cups freshly grated Parmigiano-Reggiano cheese (or grated Romano cheese)
  • cajun seasoning (1/2 – 1 tbsp)
  • black pepper, freshly ground, to taste
  • salt kosher
  • 2 pinches freshly grated nutmeg
  • 2 tablespoons olive oil (to cook and stir)

Instructions

  1. Heat a large saucepan over high heat, then add the water and salt and bring to a boil.
  2. Add the pasta and cook according to the package directions until cooked or al dente but still firm.
  3. To prevent sticking, strain and toss with a little olive oil.
  4. Season the shrimp with salt and pepper after patting them dry with a paper towel.
  5. Cajun spice, salt, and pepper are used to season the chicken.
  6. Heat 2 tbsp butter in a large pan over medium heat, then add the shrimp, increase the heat to medium-high, and cook for 3-4 minutes or until cooked through, turning halfway through. Place in a mixing dish and put aside.
  7. Add olive oil or butter to the same pan. Cook for 5-8 minutes, or until the chicken is no longer pink on the inside and fully cooked. Remove from the equation.
  8. Reduce to medium-low heat and stir in the remaining butter. With a wooden spoon, scrape any pieces stuck to the bottom of the skillet. When the butter is completely melted, whisk in the cream and nutmeg, then reduce the heat to low and cook for 2-3 minutes.
  9. Parmigiano-Reggiano cheese is whisked into the sauce. Toss in the cooked shrimp, chicken, and spaghetti until everything is thoroughly combined.
  10. Salt & pepper to taste. Serve immediately with bacon pieces as a garnish.
