Ingredients
- 4 half chicken thighs (350g each)
- 2 tablespoons all-purpose flour
- 150g finely sliced button mushrooms
- 1/2 cup white wine (dry)
- 3 cups stock (chicken)
- 2 tablespoons extra virgin olive oil
- 2 finely sliced onions
- 2 big peeled and thickly sliced carrots
- 2 smashed garlic cloves
- 1/2 cup cream (thickened)
- a quarter-cup of lemon juice
- 2 tablespoons fresh tarragon leaves, chopped
- 3 beaten egg yolks
- 2 fresh thyme sprigs, to serve
- seasoning salt
Instructions
- Preheat the oven to 180 degrees Celsius (160 degrees Fahrenheit). Place the chicken in a basin, season with salt and pepper, then toss in flour to coat. Shake off any excess flour with your hands and transfer the chicken to a wide platter.
- In a large casserole dish, heat half the oil over medium-high heat. Cook for 2 to 3 minutes on each side, or until golden brown. Cook the chicken in separate batches.
- In the dish, heat the remaining oil. Cook for 5 minutes, stirring occasionally, or until carrots and onions are tender.
- Cook for 5 minutes, stirring occasionally, until the mushrooms are cooked. Return the chicken to the dish and pour in the wine. Bring the water to a boil.
- Boil for 2 minutes, or until the alcohol has burned out. Add the stock and mix well. Bring the water to a boil. Transfer to the oven and bake, uncovered, for 45 minutes or until chicken is tender.
- When the chicken is done, move it to a dish and cover it to keep it warm.
- In a jug, whisk together the egg yolks, tarragon, and cream. Place the cream mixture in a casserole dish over low heat.
- For approximately 5 minutes, stir continuously until the sauce has thickened somewhat. Lemon juice should be added at this point. Salt & pepper to taste. Serve with crusty bread or over a bed of rice, garnished with thyme.
