  • 12 handmade bangers or fresh pork link sausages of excellent quality
  • brushing with olive oil
  • 12 halved large tomatoes
  • 12 cremini mushrooms, stems removed and cleaned
  • 12 lean bacon slices, thick
  • 12 pound sausage of sangre de sangre de sangre de sangre de sangre de sangre de (about 12 links)
  • 12 tiny bone-in lamb chops (about 4 ounces each)
  • 212 pound boneless sirloin steak, divided into 12 pieces, approximately 12-inch thick
  • 12 halved lamb kidneys
  • a few watercress sprigs as a garnish

Instructions:

A mixed grill’s simplicity makes it ideal for outdoor gatherings. All you’ll need for the al fresco dinner are a couple big salad bowls and some bread.

  • Preheat the oven to 350 degrees Fahrenheit. Cook the bangers in a lightly greased roasting pan until brown and barely cooked through, 15–20 minutes, rotating halfway. Remove from the equation.
  • Prepare the grill.
  • Cook the tomatoes and mushrooms first: On a lightly oiled baking sheet, arrange the tomatoes (cut-side up) and mushrooms (gill-side up). Season with salt and pepper after drizzling some olive oil over them. Place the baking sheet on the grill and cook for 5–7 minutes, rotating the veggies halfway during the cooking time, until the tomatoes are just tender and the mushrooms are golden brown. Keep heated on a big, warm plate, ideally in a low oven, or just covered with a piece of foil.
  • On the grill, place the bacon and bangers. Cook for 2–212 minutes on each side, rotating halfway through. Brush the blood sausages with a little oil before placing them on the grill for 2–3 minutes on each side. Place everything on a big plate and keep heated.
  • Season the lamb chops, steaks, and kidneys with salt and pepper after brushing them with olive oil. Batch-grill the vegetables:  For medium rare, the lamb chops will take 11–12 minutes on each side; the steaks will only take 40–50 seconds each side; and the kidney halves will take approximately a minute on each side. Transfer the meats to a heated plate as they finish grilling. Allow the meats to rest for a few minutes before garnishing the plates with watercress and serving.
