Curry Beef Tripe Soup

The Curry Beef Tripe Soup with eggplant, lotus shoots, and coconut is a delectable Khmer ethnic dish. Because the soup requires a lengthy cooking period, a pressure cooker is perfect. You may boil the tripe in a normal stock pot, but it’ll take two to three hours to get the required softness. 

Ingredients

1/2 pound (225 grams) beef tripe, soaked in vinegar, scrubbed with baking soda, and well washed    
6 quarts water    
2 tblsp. oil (vegetable)    
3 garlic cloves, minced    
1/4 cup lemon grass, minced (fresh or frozen)    
1/2 pound (225 gram) thinly sliced beef    
2 tblsp. curry powder    
paprika, 1/4 teaspoon    
1 tblsp. granulated sugar    
2 tblsp. fish sauce    
a half-teaspoon of salt    
black pepper, 1/4 teaspoon    
1 Asian egg plant, cut into pieces    
8 lotus shoots, boiled, washed, and drained    
2 leaves of kaffir lime    
1 cup coconut cream    
4 quarts water    
2 green onion stalks, 12 inch in length, chopped    

Curry Beef Tripe Soup recipe instructions

  1. In a large saucepan, combine beef tripe and 6 cups water; simmer for 30 minutes. Drain and rinse thoroughly under cold water; chop into bite-size pieces; put aside.
  2. Warm up a soup pot.
  3. Add oil, garlic, lemon grass, sliced meat, and beef tripe to a heated soup pot and stir thoroughly.
  4. Curry powder, paprika, sugar, fish sauce, salt, and black pepper are used in the seasoning.
  5. Combine the eggplant, lotus shoots, and kaffir lime leaves in a bowl.
  6. Simmer until the meat is cooked, adding coconut milk and 4 cups water as needed.
  7. Garnish with green onions.

Serve immediately with rice.
