Recipe for Chicken Caprese (Easy Chicken Caprese)
This easy chicken breast meal is prepared with mozzarella, tomato, basil, and olive oil in just one pan.

Instructions:

Preheat a large skillet over medium-high heat and add 1-2 tablespoons avocado oil. Season the chicken breasts with salt and pepper, as well as Italian spice.

Cook the chicken thoroughly in a heated skillet, being careful not to overcrowd it, for approximately 4-5 minutes each side.

Place cooked chicken on a dish and top with a slice of mozzarella cheese. Cover the dish tightly with foil and put it aside to enable the cheese to melt.

Reduce the heat to a medium-low setting. If desired, pour more wine into the pan and use a wooden spoon to scrape off any browned pieces (we did not use wine in the video). Allow 1 minute for the wine to reduce slightly before stirring in the butter and adding the halved tomatoes.

Allow 3-5 minutes for the tomatoes to blister.

Remove the pan from the heat and add the lemon juice and half of the fresh basil.

Before serving, return the cheesy chicken to the heated pan and top with blistered tomatoes, a drizzle of olive oil, and the remaining fresh basil.
