Time to prepare: 20 minutes

  • Preheat a large skillet over medium-high heat and add 1-2 tablespoons avocado oil. Season the chicken breasts with salt and pepper, as well as Italian spice.

  • Cook the chicken thoroughly in a heated skillet, being careful not to overcrowd it, for approximately 4-5 minutes each side.

  • Place cooked chicken on a dish and top with a slice of mozzarella cheese. Cover the dish tightly with foil and put it aside to enable the cheese to melt.

  • Reduce the heat to a medium-low setting. If desired, pour more wine into the pan and use a wooden spoon to scrape off any browned pieces (we did not use wine in the video). Allow 1 minute for the wine to reduce slightly before stirring in the butter and adding the halved tomatoes.

  • Allow 3-5 minutes for the tomatoes to blister.

  • Remove the pan from the heat and add the lemon juice and half of the fresh basil.

  • Before serving, return the cheesy chicken to the heated pan and top with blistered tomatoes, a drizzle of olive oil, and the remaining fresh basil.
