Preheat the oven to 350 degrees Fahrenheit.

Place the peppers on a baking sheet and cut them in half lengthwise.

Remove the casing from the chorizo and combine it with the cilantro, cheese, and egg in a mixing dish. Using your hands, mix until everything is equally distributed.
