Easy Stuffed Peppers

Poblano peppers filled with chorizo and cheese are the ultimate comfort food.

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit.

  • Place the peppers on a baking sheet and cut them in half lengthwise.

  • Remove the casing from the chorizo and combine it with the cilantro, cheese, and egg in a mixing dish. Using your hands, mix until everything is equally distributed.

  • Fill each half of a pepper with the chorizo filling until all of the peppers are filled. If you wish to scale this recipe up or down, it will average out to 4 ounces for two halves of the pepper.

  • Cook for 20 minutes, or until the meat is fully cooked and the cheese has melted.

  • Refrigerate for up to three days in an airtight container. Enjoy!
