Preheat the oven to 350 degrees Fahrenheit.
Place the peppers on a baking sheet and cut them in half lengthwise.
Remove the casing from the chorizo and combine it with the cilantro, cheese, and egg in a mixing dish. Using your hands, mix until everything is equally distributed.
Fill each half of a pepper with the chorizo filling until all of the peppers are filled. If you wish to scale this recipe up or down, it will average out to 4 ounces for two halves of the pepper.
