Homemade Luganega Sausages |

A classic Italian sausage recipe that is simple to make and a crowd pleaser.

The sweet luganega sausage recipes is a recipe that includes all the ingredients needed to make homemade luganega sausages.

Instructions:

  • 12 cup white wine, dry
  • 6 bay leaves (fresh or dried)
  • 6 garlic cloves, peeled
  • 6 lbs. pork butt (see note), sliced into 2-inch chunks
  • 12 tbsp. sodium chloride
  • 1 teaspoon pepper, freshly cracked
  • 12 teaspoon allspice powder
  • Sausage casing (ideally 12 inch in diameter and in one piece)

In a small dish, pour the wine over the bay leaves. Toss the garlic cloves into the basin after whacking them with the side of a knife. Allow to steep for 2 hours at room temperature.

Using a disc with holes approximately 3 1/6 inch in diameter, grind the pork straight into a basin. Season the meat with salt, pepper, and allspice. Remove the garlic and bay leaves from the wine, wrap them in cheesecloth or a clean kitchen towel, and submerge them in it. Place the cheesecloth over the meat in the basin and squeeze. Rep till all of the wine has been consumed. Garlic and bay leaves should infuse the meat with flavor. Combine all of the ingredients in a large mixing bowl. Refrigerate the bowl for 2 to 3 hours after covering it.

Meanwhile, place approximately 1 inch of one end of the casing over the spout of your sink’s faucet, ensuring that the remainder of the casing is in the sink. For a minute or two, gently run cold water through the casing. If you’re using more than one piece of casing, repeat the process.

Remove the casing from the spout and stuff with marinated pork, as directed by the maker of your sausage stuffer. As you proceed, twist the sausage into 32-inch links.

VARIATION

Fennel Sausage (Italian-American)

For these sausages, use wider sausage casings, approximately 1 1/2 inches in diameter. Omit the allspice and add 1 tablespoon fennel seeds and 1 teaspoon crushed red pepper to the sausage mixture as directed above (makes about 18 links).
