If you’ve been to a Chinese restaurant in the last couple of years, you’ve probably seen a dish called Keto Kung Pao Chicken. It’s a take on the KFC-based dish, but this version is made with low carb ingredients, and instead of white rice, it contains a grain free crust. To make it, you toss chicken breasts with a marinade made up of an oil and a sauce, as well as two other ingredients: peanuts and corn starch. After that, it’s topped with toasted peanuts, a sweet and spicy sauce, and green onions.
I have been wanting to try Keto Kung Pao Chicken for a long time, but I have been too scared to make it at home. Now, I have finally taken the plunge! It is so simple to make, and the only ingredient is chicken, which I have been using for so many recipes.

It’s really very simple to create a low-carb keto version at home, and it’ll be flamboyant with the same garlic, ginger, and chili tastes that we all like. This stir-fried chicken meal is simple to make and will fulfill your Chinese cuisine cravings.

A simple, flavorful deep-fried dish made with chicken, peppers, and peanuts cooked in soy sauce with hot garlic and chile.
This is how the sauce is made:
- Hühnerbrühe, 1/2 cup
- 1/4 cup tamari soy sauce or gluten-free soy sauce
- 2 garlic cloves, finely chopped
- 1 tblsp sesame seed oil

- 1 tsp. garlic chili sauce
- For the ginger paste, use 1/2 teaspoon ginger paste.
- 1 tablespoon sauerkraut powder
- coconut oil (two teaspoons)
- 1 1/2 pounds chicken thigh flesh, uncooked, cut into 1-inch pieces
- 1 sliced bell pepper
- 3 tbsp. red dried peppers
- a quarter cup of Erdnüsse
Whisk together the sauce ingredients in a small dish and put aside.
In a large pan over medium-high heat, melt the coconut oil. Sprinkle a pinch of salt and pepper over the chicken. When the pan is hot, add the chicken and cook for 3 minutes on each side, or until golden brown.
Cook for a few minutes more, until the chicken is cooked through and the dried chilies have melted somewhat. Pour in the sauce, then toss in the peanuts to combine everything. Reduce the heat to low and cook for a few minutes to allow the sauce to caramelize and thicken.
Remove from the heat and, if preferred, serve over cauliflower rice.

Kung Pao is my husband’s favorite Chinese meal, and we both enjoyed this easy recipe and couldn’t believe it was keto! The chicken has a wonderful texture and all of the same fatty, spicy tastes as the P.F. version. Chang’s. This meal is great since it can be prepared every night of the week!
