It’s not potatoes, believe it or not!
Friends, I believe we’ve all forgotten about the humble radish and how adaptable it can be without being too carbohydrate-laden.
I used peeled radishes for the usual potato in this meal, and the outcome was fantastic. You’ll think twice about eating hash browns, I promise!
I gave it a good cleaning, but honestly, you don’t need one. It will give the meal a red potato appearance, which will deceive non-Ketorians.
You don’t want to eat radishes anymore? That’s also a plus! Serving the roasted beef with a melt-in-your-mouth cauliflower puree is another option for a comfort food meal. YUMMY!

Jenna, one of my assistants, tested this dish and gave her feedback:
This is my favorite method to prepare mashed potatoes, and I love how the radishes take on a potato taste. I believe the skin gives them a potato-like texture. To make the meal more tasty, I’ll add the juice from the peppers next time. YUMMY! This dish is fantastic!
