Indian Baked Eggs with Masala

On a fiery bed of tomatoes and onions, perfectly fried eggs.

3 person servings

Time to prepare: 5 minutes

15 minutes to prepare

Instructions:

  • Preheat the oven to 400 degrees Fahrenheit.

  • On medium heat, heat a cast iron skillet. Pour in the oil.

  • Cook, stirring occasionally, until the onion and jalapeño are nearly transparent, about 4-5 minutes. Cook for 30 seconds, or until garlic is aromatic.

  • Add the salt, garam masala, chili powder, ginger, and cumin and mix well. Pour in the broth to deglaze the pan, then add the crushed tomatoes and stir thoroughly. Simmer for 5 minutes, or until the liquid has somewhat reduced.

  • Remove the pan from the heat and make 6 pockets in the sauce using a spoon. In each pocket, crack an egg.

  • Transfer skillet to oven and bake for 5-7 minutes, or until desired consistency is reached. Garnish with cilantro and serve right away if preferred.
