Ingredients
Regarding the Chicken
- 3 pound breast of chicken
- 1 quart of Buffalo sauce
- 1 tablespoon honey
- 1 tablespoon Cholula de Chili Lime
- 1 tsp Scotch Bonnet Pepper Sauce (green)
- 3 garlic cloves, minced
- 1 tablespoon of butter
- 1/2 teaspoon of lime juice
- season with salt and pepper to taste
To make the wraps
- 6 big bibb or iceberg lettuce leaves
- Gorgonzola is a kind of gorgonzola cheese.
- carrots, shredded
- tiny slices of celery, cut
- ranch dressing or blue cheese dressing
Instructions

Preheat the Sous Vide Precision Cooker to 150 degrees Fahrenheit.

Trim the chicken and season it to taste with salt and pepper. Put everything in a big Ziploc bag.

1/2 cup buffalo sauce (I use Frank’s), honey, chili lime Cholula, green scotch bonnet pepper sauce, and garlic are combined in a mixing bowl. Over the chicken, pour the sauce.

Seal the bag and put it in the water bath using the water immersion method. Make a one-hour timer on your clock.

Take the chicken out of the Ziploc bag and set aside the liquid. Using two forks, shred the chicken into bite-sized pieces.

1 tablespoon butter, melted in a large sauce pan 1/2 cup buffalo sauce, 1/2 lime juice, and the liquid from the saved cooking liquid Bring to a boil, then reduce to a low heat.

Stir the chicken into the boiling sauce to properly coat it. As required, adjust the taste.

Place 1/2 cup shredded buffalo chicken in each lettuce leaf for the lettuce wraps. Carrots, celery, gorgonzola, and your favorite dressing go on top.
Notes
If you don’t have a Sous Vide, you can make this dish in a slow cooker, but I’d still suggest buying one if you want juicy chicken.
