3 Dungeness crabs, cooked or raw, cleanly cracked shells, put aside    
1/2 sliced white onion    
2 green onions, 1 inch thickly sliced    
1/4 cup ginger, finely sliced    
1 slice of jalapeo    
2 minced garlic cloves    
2 shallots, finely chopped    
3 tbsp. vegetable oil for stir-frying    

Sauce for stir-frying

coconut milk, 1/2 can    
2 tsp. red curry paste    
sugar (two tablespoons)    
oyster sauce (two tablespoons)    
2 tablespoons soy sauce    
1/2 teaspoon Chinese five-spice powder    
In a mixing dish, combine all ingredients and put aside.

  1. In a wok, heat 3 tablespoons of oil until hot.
  2. Stir in the garlic, shallots, ginger, and jalapeo until fragrant.
  3. Crabs should be included. If you’re using cooked crabs, it won’t take long, but if you’re using raw crabs, add a little water to steam the crabs until they become pink.
  4. Now add the stir fry sauce and toss or turn it a few times to combine the sauce and crabs (this is why you must break the shell so the flavor can penetrate), taste, and adjust the spice.
  5. Turn off the heat and add the white onion and green onion.

Rice should be served with the stir-fried curry crabs.
