- Peppercorns, green cardamom, cinnamon, brown cardamom, cloves, coriander seeds, cumin seeds, turmeric powder, and bay leaf are roasted on a dry pan.
- Remove from the pan and set aside to cool fully.
- To make a fine powder, combine all of the roasted spices in a blender or grinder.

Ingredients

- 4 skinless chicken breasts
- 4 skinless chicken thighs
- to taste with oil
For the marinade, combine the following ingredients.

- 4 tsp paste de chili rojo
- 1 tblsp. of oil
- 3 tablespoons curd
- 3 tbsp garlic and ginger paste
- Tandoori Masala, 1 1/2 tsp
- 2 tsp masala for chaat
- a half lemon (juiced)
- season with salt to taste
To make tandoori masala, use the following ingredients.
- 2 cinnamon sticks
- 3 Cloves
- 1 leaf of bay
- Turmeric, 3/4 tsp
- 5 cardamom pods (green)
- 3 cardamom pods (brown)
- 1 teaspoon black pepper
- 2 tablespoons cumin seeds
- a teaspoon of coriander seeds
Instructions
- In a mixing bowl, combine red chili paste, ginger garlic paste, chaat masala, tandoori masala, oil, curd, salt, and lemon juice.
- Rub the marinade all over the chicken, including beneath the skin. Make tiny cuts/slashes in the chicken to ensure that the marinade coats it evenly and effectively.
- Cover and marinate in the refrigerator for 30 minutes or up to 3 hours.
- On a tandoor or griller, cook the chicken pieces. At regular intervals, baste with oil.
- Preheat the oven to 450°F and line a baking sheet with aluminum foil if making it in the oven. Glaze the chicken with oil to prevent it from sticking to the oven and roast for 45 minutes, flipping once halfway through, until it is cooked through and golden brown.
- Serve with lemon wedges and onion rings.
