I used shrimp in this dish, but you could easily substitute chicken, Chinese sausage, or even Spam! When my mother prepares it for my father, she really adds Spam.
If you’re preparing the dish with a full pineapple, I suggest putting the rice in the pineapple shell that has been hollowed out. My family liked how it turned out, and if you’re hosting a dinner party, it’ll certainly be a hit.
Pineapple Fried Rice Instructions:
-For this dish, fresh pineapple, even pre-cut, is preferable than canned pineapple. Canned pineapple lacks the tanginess that this dish requires, and canned pineapple lacks the acidity that this recipe requires.
-Use chilled rice from the previous day. When stir-frying, chilled rice holds its form better than fresh rice, which may become mushy.
-Because stir fries cook quickly, prepare your ingredients ahead of time and serve the rice while it’s still hot.

If you’re using a large saute pan instead of a Wok, split the recipe in half and cook the rice in two batches. Prepare all of your ingredients first.

Cut the pineapple in half and score horizontally across to cut into pieces to hollow it out. Then remove the core and pineapple pieces with a spoon. Drain the pineapple juice from both the pineapple shell and the pineapple pieces. Although the juice will turn the rice mushy, it may be used to create a delicious drink, cocktail, or smoothie.
