Pineapple, shrimp, and rice. It can have many different names. But the taste is always the same. And what’s more, it’s got a wonderful aroma that hits you the second you smell it. It’s a delicacy that can be enjoyed in many ways. One of the most popular recipes for this Thai recipe is the Pineapple Fried Rice recipe. But if you’re wondering what’s the difference between fried rice and fried rice, here are a few differences between these two recipes that can help you get the most out of this dish.
If you live in Thailand or have visited, you’ll know that every local restaurant serves a unique version of this dish. Sometimes it is topped with a fried egg, sometimes it is served with a side of curry. This one is made with shrimp, pineapple, the traditional Thai spice mix of kaffir lime leaves, and some red chili peppers. The shrimp are bathed in a tasty, spicy, and sweet pineapple sauce. This dish is a favorite for most Thai people, and is often served as a main dish.
Pineapple Fried Rice with Shrimp from Thailand is a tropical take on fried rice that is best served in the pineapple shell.
Summer is approaching, and fresh tropical fruit is abundant. Pineapple is one of my favorites, and I use it in everything from chili to Pina Coladas! Thai Pineapple Fried Rice is a traditional Thai dish that blends the sweet and tangy flavors of pineapple with the comforting texture of fried rice. I used shrimp in this dish, but you could easily substitute chicken, Chinese sausage, or even Spam! When my mother prepares it for my father, she really adds Spam.
If you’re preparing the dish with a full pineapple, I suggest putting the rice in the pineapple shell that has been hollowed out. My family liked how it turned out, and if you’re hosting a dinner party, it’ll certainly be a hit.
Pineapple Fried Rice Instructions:
-For this dish, fresh pineapple, even pre-cut, is preferable than canned pineapple. Canned pineapple lacks the tanginess that this dish requires, and canned pineapple lacks the acidity that this recipe requires.
-Use chilled rice from the previous day. When stir-frying, chilled rice holds its form better than fresh rice, which may become mushy.
-Because stir fries cook quickly, prepare your ingredients ahead of time and serve the rice while it’s still hot.

If you’re using a large saute pan instead of a Wok, split the recipe in half and cook the rice in two batches. Prepare all of your ingredients first.
Cut the pineapple in half and score horizontally across to cut into pieces to hollow it out. Then remove the core and pineapple pieces with a spoon. Drain the pineapple juice from both the pineapple shell and the pineapple pieces. Although the juice will turn the rice mushy, it may be used to create a delicious drink, cocktail, or smoothie.

Place the eggs on the other side of the garlic and onions. Allow them to simmer for a few minutes before scrambling them all together.
Toss in the rice, soy sauce, and curry powder using two spatulas to evenly cover the rice.
After the rice has been well combined, add the pineapple pieces, cashews, and pepper. Toss lightly and taste the rice to determine if it needs anything more. You may add a little sugar or salt if it needs more sweetness or salt if it needs more salt.
Chopped Cilantro, Green Onions, and Lime wedges serve as garnish. Enjoy while the rice is still hot in a pineapple shell.
I love cooking and eating Thai food. I make it all the time and I teach my friends and family how to cook it. Today I made a recipe that I tried a couple of times before but never published. I hope you like it. I served it today with the thai shrimp stir-fry and red cabbage salad but I think it would be great to serve it with any kind of rice..
