Valentine’s Day is a day of love and romance, but it can also be a day of overindulgence. I tried to make a healthy cookie recipe that will satisfy your sweet tooth without compromising on your waistline.

These 3 ingredient strawberry cake cookies are so easy to make and they taste delicious. They’re perfect for Valentine’s Day!

To reduce the cleaning to a minimum, line your baking sheet with parchment paper. It also prevents the bottoms of cookies from browning too much.

All of the ingredients will be combined in one dish, from which you may scoop out the dough and shape it into balls.

Because you want the dough balls to be consistent in size, you may use a tablespoon as a measuring instrument or a cookie scoop to achieve this.

To create these Cake Mix Cookies, you’ll only need 5 ingredients:

1 white cake mix box

-3 egg whites: I use only the egg whites instead of the entire egg to keep the color of the cookies as white as possible.

-melted coconut oil: I use coconut oil instead of butter to preserve the cookies’ white hue.

You may use store-bought cookie frosting, but I’ve included a fast and simple recipe below. I made mine with 1/2 tsp raspberry extract and 1/2 tsp coconut extract, and it was delicious!

-Valentine’s Day Candy and/or Sprinkles Sprinkles, of course, are always a nice idea!

Preheat the oven to 350°F and prepare a cookie sheet with parchment paper. Remove from the equation.

In a mixing bowl, whisk together the eggs and cake mix using an electric mixer. It should have the appearance of damp sand.

Toss the cake mix and egg mixture together with the melted butter. Blend everything together until it’s completely smooth. The dough will be thick and somewhat sticky.

Before placing them on the parchment paper on a prepared baking sheet, scoop out the dough and shape each scoop into a ball to help flatten the edges.

Preheat the oven to 350°F and bake for 8-10 minutes, or until the cookies are puffy and the tops are no longer shiny. Allow to cool for 3-4 minutes on the cookie sheet before transferring to a cooling rack.

Yes, you certainly can! Before transferring them to a Ziploc bag, I suggest freezing them flat on a baking sheet to avoid them from sticking together. While a big cookie sounds wonderful in principle, it’s problematic when you need a fast snack on the move. Before eating, defrost the cookies on the counter for approximately 10 minutes.
