Keto Curried Beef

Keto Curried Beef is a great choice if you are looking for a simple meal that is healthy, filling and flavorful. This keto curry is incredibly easy to make, and once you have the spices measured out, it will come together very quickly. It is a very simple dish that can be served over rice or cauliflower rice, and can be a go-to staple for people trying to follow a low carb diet.

It’s no secret that my husband and I have a fun little habit of trying out new foods that we come across. A few weeks ago, we got the idea to try a keto diet and I was determined to find new recipes that weren’t pizza, so I got to work and came across an incredible curry.

I have always been a meat-aholic, but I can never eat it the same way twice. My first time trying curried beef (Tikka Masala) I thought it was one of the more exotic curries I have tried and was a bit apprehensive. I remembered it tasted like curry, but I couldn’t put my finger on the specific spices. Then I realized that I couldn’t even remember the first time I had tried curry. It was either before or after Indian food became my favorite cuisine, and I was too young to remember.

We frequently find that one-pot dinners are the easiest to prepare, and this Curried Beef on the Keto Diet dish is no exception! It’s creamy and rich, substantial, and a well-balanced dinner from meat to vegetables.

It reminds us of Indian takeout, but without the extra sweets or the concern about the number of carbohydrates in each dish. We can relax and enjoy ourselves while still sticking to our macros!

The simplest curry recipes are the best!

The most difficult aspect of this curry recipe is waiting 20 minutes for the meat to cook through and become soft before digging in. Aside than that, this recipe is simple to follow from beginning to end.

Most curry recipes, like our butter chicken dish, ask for throwing everything into one pot, stirring occasionally, and waiting 15-30 minutes for the magic to happen. This recipe is no exception, and it may be tailored to your preferences.

As you can see from the photos, we added cauliflower near the end to round out the dish, but you can also serve it with our low carb naan or switch up the veggies entirely!

Recipes for Keto Coconut Milk

We love having at least three to four cans of coconut milk in our house at all times because we love how versatile it is. You may not be able to tell just from looking at the pictures, but this recipe contains a can of coconut milk. It’s thick, rich and adds a subtle, delicious flavor to anything you make with it. It’s also great in desserts like our low carb coconut cream pie and breakfasts like our keto oatmeal!

You may use it to create frosting for cakes and sweets, or simply go off the rails and make your own Coconut Curry! It’s one of our favorite ingredients to play around with.

Curried Beef on the Keto Diet

Instructions:

  • Freeze the coconut milk can until you’re ready to use it in the recipe.

  • Add 1/2 tbsp coconut oil to a big skillet or dutch oven and heat over medium-high heat.

  • When the pan is heated, add the stew meat chunks and brown both sides (does not need to be cooked all the way through).

  • Remove the pan/pot from the heat and put aside in a bowl. Turn the heat to medium and add the 1/2 tbsp coconut oil to the heated pan. Using a spatula, scrape up the bottom.

  • Add in the diced onion, and allow to cook for 1-2 minutes until translucent. Add in the garlic, curry powder, cumin, salt and chili powder. Combine using the spatula and cook for 1-2 minutes until spices are fragrant.

  • Stir in the stew meat until everything is well combined.

  • Remove the coconut milk can from the freezer (it should have been frozen for at least 10 minutes). You should be able to separate the milk from the coconut water at the bottom after it has solidified. Allow the solidified coconut milk to melt down into the beef mixture.

  • Stir in the water until it is completely mixed. Allow to simmer for 20 minutes with the cover on the pan/pot. If you’re adding the cauliflower, do it after the 10 minutes has gone, then cover and simmer for the remainder of the time.

  • Remove the cover and serve immediately (meat will be completely cooked) or leave to reduce for an extra 10 minutes for a richer curry sauce.

  • Enjoy with cauliflower rice or our low-carb naan!

  • Note: Refrigerate for up to 1 week or freeze for up to 1 month in a tight container.
