Tantuni, a kind of native meat wrapped with Mersin, is a particularly tasty local dish in which sautéed meat is produced by frying on a sheet with the addition of tail fat. Making Mersin tantuni at home is more easier than you may imagine.
This taste may be served as a wrap between bread or open bread known as lavash, which can be readily made at home on superheated vok pans or on a flat sheet.

- 150 grams of ribeye steak
- 1 onion, medium
- 2 tomatoes, tiny
- 2 green peppers, medium
- 2 tblsp. extra virgin olive oil

- a quarter teaspoon of sumac
- a quarter bunch of parsley
- 1 teaspoon red pepper powder
- 1.5 quarts water
For the purpose of service:
- 1 slice of white bread (or two lavash)
- 1 lemon (medium)
- 10 pickled peppers, tiny

The aim of adding water or broth to the sheet while cooking is to create steam to regulate the sheet’s temperature and soften the bread that will be wrapped around the tantun. You have the option of using pre-rested meat, adding a little quantity of water instead of broth, and lighting the burner.

Red pepper powder may be added to the oil while it is being heated.
What is the Tantuni Recipe?
1 beef ribeye (300 grams) Cut the extra fat into tiny cubes after cleaning it. Boil the water and then pour cold water over it until it absorbed.
2-Preheat the stovetop vok or sheet pan. Fill the pan with 2 tablespoons cotton oil and the cooked meat. Toss the meat with 1 teaspoon of red ground pepper and 1 cup of water.
3-After the meats have drawn water, cut the green peppers in half and remove them from the pan to begin roasting.
4-After the peppers have been roasted, remove the oil from the lavash and sandwich bread that will be served on top of the meat.
5-After adding 2 diced and peeled tomatoes, stir them in and simmer for a few minutes more.
6-Place the cooked tantuni in a sandwich bread or lavash, top with sumac and lemon juice if desired.

You may also serve the tantuni without the sumac and add finely chopped parsley to the onion salad, and you can add the tomatoes to the tantuni without cooking it for a long time.
