- 2 chicken breast fillets, big
- 1/4 cup all-purpose flour
- 1 egg
- 1 cup breadcrumbs (panko)
- 1 finely sliced avocado
- a quarter-cup of lemon juice
- 1 finely sliced green onion
- 3 cups iceberg lettuce, shredded
- 1 cucumber, cut in half lengthwise and sliced diagonally
- 2 tablespoons oil (vegetable)
Ingredients in the sauce:
- 1 1/2 teaspoons Worcestershire sauce (optional)
- 1/3 cup sauce de tomate
- 1 teaspoon of soy sauce
- 1 teaspoon mustard (Dijon)
- To serve, lemon wedges
Instructions
- Set aside a bowl containing Worcestershire sauce, tomato sauce, soy sauce, and mustard.
- Each chicken breast piece should be cut in half horizontally to make two thin fillets.
- Season the flour with salt and pepper on a separate dish, then beat the egg in a shallow basin. On a separate dish, spread breadcrumbs.
- Place the chicken in the flour mixture first, then the egg mixture, and finally the breadcrumbs. Arrange on a platter. Rep with the rest of the chicken pieces.
- Heat the vegetable oil in a large frying pan over medium heat. Cook for 3 to 4 minutes on each side, or until browned and cooked through.
- Transfer the chicken to a serving dish and set aside to cool for 2 minutes.
- Place cucumber, avocado, and lettuce in a large mixing bowl with a squeeze of lemon juice on top. Drizzle the prepared sauce over the chicken and top with green onions. Warm rice, salad, and lemon wedges on top are served.
