  • 123 cup flour (all-purpose)
  • a quarter teaspoon of salt
  • 1 cup (4 ounces) sharp Cheddar cheese, coarsely shredded

  • 5 to 6 cups peeled, cored, and thinly sliced pie apples (such as Granny Smith, Jonathan, or Winesap)
  • 12 cup light brown sugar (granulated)
  • cornstarch, 1 tablespoon
  • a quarter teaspoon of cinnamon
  • 1/8 tsp. nutmeg
  • a quarter teaspoon of salt
  • 2 tablespoons unsalted butter


I’ve cooked a number of apple pies, and this is one of my favorites.

  • Preheat the oven to 450°F for the crust. Combine the flour and salt in a sifter. Stir in the cheese until it is completely incorporated. Work the butter into the flour until it resembles cornmeal in texture. One spoonful at a time, drizzle in the water and stir until all of the flour is wet and the dough pulls away from the edges of the basin. Make a half-dozen cuts in the dough. Make two flattened circles out of the dough. Roll out the dough until it’s 2 inches bigger than an inverted pie pan on a lightly floured surface. One crust should be used to line a 9-inch pan, while the other should be saved for the top.
  • Place the apples in a large mixing bowl for the filling. In a small mixing dish, combine the sugar, cornstarch, cinnamon, nutmeg, and salt. Gently fold the apples into the sugar mixture until they are evenly covered. In the pastry-lined pan, arrange the apples in layers. Make a butter smear. Cut holes on the top crust to allow steam to escape. 10 minutes in the oven Reduce the temperature to 350 degrees Fahrenheit and bake for another 35 to 40 minutes.
