It may seem ridiculous to offer such a simple recipe, but I have a few suggestions for taking these Breakfast burritos to the next level.

Let’s start with the Mess-Free Crispy Bacon. Bacon that is uniformly cooked, lays flat, crisps up well, and is easy to clean up! This is how I’ve been cooking bacon for years, and now that we have a new hood, there’s no residual bacon odor in the house. Not that the odor was unpleasant, but it did make me hungry!Bacon Egg Cheese Burritos- Tips for Crispy Bacon and Soft Scrambled Eggs on ThaiCalliente.com

Begin by preheating your oven to 400 degrees Fahrenheit, and let it to preheat for a few minutes after the indicator has gone off to verify that it is at that temperature. You’ll need a baking sheet and rack set similar to this:

Place the rack on top of the aluminum foil-lined bottom piece, which has been folded over on the sides. Because the bacon will shrink a little during cooking, the strips may be close together on the rack. Depending on how crispy you want your bacon, bake for 15-20 minutes. After it cools, it will get crispier. Save 2 tablespoons of bacon oil for the eggs, or more if you want to use it for anything else. Toss the foil by gently folding up the edges and tossing it in the garbage. Crispy Bacon Made Simple!Bacon Egg Cheese Burritos- Tips for Crispy Bacon and Soft Scrambled Eggs on ThaiCalliente.com

Scrambled Soft Eggs-

The key is Low and Slow! Start with a non stick skillet and rubber spatula.  Place the bacon grease in the pan and heat over medium low heat for about a minute. I use about 1.5-2 eggs per a burrito. Crack eggs, whisk aggressively, and pour into pan. There should be No sizzling! If it’s sizzling, your pan is too hot. It will seem like the eggs are not cooking, but gently move your spatula around the pan every 30 seconds or so, and you will see the eggs start to cook. Turn off the heat right before they are fully cooked, season with salt and pepper, give one more turn, and place into tortillas.Bacon Egg Cheese Burritos- Tips for Crispy Bacon and Soft Scrambled Eggs on ThaiCalliente.comWarm flour tortillas in the microwave till soft, about 20-30 seconds. Place scrambled eggs, cheese, and bacon slices in tortillas and wrap tightly. I like to spice it up with some salsa, hot sauce, or avocado.

Instructions

  • Begin by preheating your oven to 400 degrees Fahrenheit, and let it to preheat for a few minutes after the indicator has gone off to verify that it is at that temperature.

  • Fold the edges of an aluminum foil-lined baking pan over, then put the rack on top.

  • Add the bacon fat to a nonstick skillet and cook for approximately a minute over medium low heat. Break eggs into a mixing bowl and whisk well before pouring into the pan. No sizzling is permitted! Your pan is too hot if it’s sizzling. The eggs may seem to be uncooked at first, but if you gently move your spatula about the pan every 30 seconds or so, the eggs will begin to cook. Just before they’re done, remove them from the pan, season with salt and pepper, give them one more flip, and stuff them into tortillas.

  • Microwave flour tortillas for 20-30 seconds, or until soft. Wrap scrambled eggs, cheese, and bacon pieces firmly in a tortilla. I also like to add some salsa, spicy sauce, or avocado to it.
