Baked Italian Chicken Breast with Veggies

I came across this recipe while looking for something to accompany our dinner of 4-grain pasta with pesto sauce. I’ve tried it before with some success, but my guests always mess up the recipe and end up with something that is more like chicken nuggets than chicken breast. So, I gave this another go and this time it worked perfectly. Very easy to make and yummy. (Plus, there’s only two of us, so one batch is plenty.)

Just like its fried counterpart, a baked chicken breast is a very versatile dish that can be dressed up with almost any veggies. Here, I am showing you a nice twist on the classic dish, using a whole chicken breast, and some broccoli, carrots, and peppers to create a colorful, but still healthy meal.

This is a recipe for baked chicken breast with vegetables. I have made this many times and the family loves it. While you can use fresh vegetables in lieu of frozen, I did not feel like toting around bags of frozen vegetables. Frozen vegetables just can’t compare with fresh.. The chicken is deliciously seasoned with Italian spices and served with warm, creamy mozzarella. This recipe is easy and tasty, and it can be made in just one dish!

We sometimes order takeout for pizza night, and when we do, we get a Papa Murphys trademark pie. We never wander from it since it has such delicious tastes! That pizza served as the inspiration for this chicken dish. I enjoy adding some hearty zucchini to the mix, and I can’t forget to include my favorite ingredient… bacon! This is one of our favorite chicken bakes, with artichokes, tomatoes, and mozzarella!

Is baking raw chicken with veggies safe?

Absolutely! The trick is to bake everything at a high enough temperature for an extended period of time. When preparing raw chicken, you should always cook it until the internal temperature reaches 165 degrees Fahrenheit.

Is it necessary to cover this recipe with foil before baking?

Cooking chicken in the oven may be done in a variety of ways, and many of the stages vary depending on the cook. You do not need to cover this recipe in any way. The veggies will crisp up a little as a result. If you cover this dish, the moisture will be trapped within, making the veggies too soft for my liking! As a result, I suggest preparing it according to the recipe cards!

Our Baked Italian Chicken Breast with Veggies is made using the following ingredients:

  • Chicken Breast Thinly Sliced
  • Artichokes
  • Tomatoes, Cherry
  • Cheese Mozzarella
  • Bacon
  • Seasonings from Italy

To prepare our Baked Italian Chicken Breast with Veggies, follow these steps:

Preheat the oven to 375 degrees Fahrenheit. Place the thinly sliced chicken breast on an oiled, shallow baking dish while the oven heats up. Evenly sprinkle the Italian Seasonings on top of the chicken.

The tomatoes, artichokes, bacon, and zucchini should now be diced into tiny, bite-sized pieces. Because this mixture will be laid over the chicken, make every effort to trim the pieces to the same size.

Add the diced food from the previous step, as well as the mozzarella cheese, to a medium mixing bowl. Stir until everything is well mixed.

Finally, evenly spread the vegetable mixture over the chicken. Place the dish in the oven, uncovered, on the center rack, and bake for 35 minutes, or until the chicken reaches 165 degrees.

Remove from the oven and set aside for 5 minutes to cool. Serve and have fun! If desired, top with basil and additional mozzarella.

Ingredients

  • 4 chicken breasts, thinly sliced
  • 1 quart cherry tomatoes, halved
  • 1 zucchini, peeled and sliced into bite-size chunks
  • 3/4 cup sliced artichokes
  • Bacon (ten ounces) (about 10 slices)
  • 1 CUP CHEESE (MOZZARELLA)
  • Italian Seasonings, 3 Teaspoons

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Grease a shallow baking dish and lay four thinly sliced chicken breasts on the bottom. Evenly season the chicken with the Italian spice.
  3. Cut all of the veggies into bite-sized pieces after that. In a medium-sized mixing basin, combine them with the mozzarella cheese and chopped bacon.
  4. Bake for 35 minutes after pouring the vegetable mixture over the chicken. (Or until the chicken reaches a temperature of 165 degrees Fahrenheit.)
  5. Allow to cool for 5 minutes after removing from the oven.
  6. Serve and have fun!
