Chicken Vindaloo is a traditional Goan dish, that is a favourite dish of mine. I have heard many versions of the story behind this excellent dish, but I have never heard anything that has actually proved it true. In spite of this, I love the dish, so I thought I would try and find out the truth.

Every time I prepare this Vindaloo chicken, my whole family raves about it, and my relatives often ask, “Can I have one more chicken piece?” Vindaloo Chicken is spicy, acidic, and somewhat sweet.

  1. Wash the chicken well and marinate for at least 2 hours or up to overnight in salt and turmeric powder.
  2. Add the butter to a medium skillet and cook the marinated chicken for approximately 10 minutes.
  3. In the meanwhile, prepare the vindaloo masala. In an open skillet, toast the cumin and fenugreek seeds, then crush them together to make a masala.
  4. Let’s start with the main course: heat the oil in a pan over medium heat. Combine the ginger garlic paste, red chili powder, chopped shallots, tomato puree, turmeric powder, salt, vindaloo masala, chicken, and tamarind water in a large mixing bowl.
  5. Toss everything together thoroughly, and your chicken vindaloo is ready.
  6. Serve hot with roti or rice, garnished with fresh coriander leaves.
