This Creamy Zucchini Chicken Bake is easy to prepare, filled with vegetables and protein, and ideal for those weekly “What’s for Dinner?” inquiries. When it’s time to plan the weekly meal, I’m always happy to see this one on the list! It’s what I call my “lazy supper night” since it’s so simple to prepare. Isn’t it true that Ritz crackers make everything better? If you want to prepare this ahead of time, leave the ritz cracker topping off and sprinkle it on when you’re ready to bake. Do you want to make it a little bit healthier? Simply replace the sour cream with plain greek yogurt.

Is it possible to prepare this ahead of time?

Absolutely! One of the many things I like about this dish is how easy it is to make. Completely follow the steps outlined here. The only change I made was to wait until just before baking to add the ritz topping. Because the crushed crackers will already be flavored with butter, just place them in a small baggie or dish and keep them with the casserole until ready to use!

I’m out of ritz crackers. What other options do I have?

Is there no ritz? It’s no issue! While I suggest the ritz since its taste complements this meal, there are a number of alternatives. If you have a box or bag of stuffing, combine 2 cups crumbled stuffing with the melted butter. Saltines, thick bread crumbs, or a cracker of your choosing may also be used. Remember that half of the mixture will be used as a topping and the other half will be mixed throughout the dish.

The following are the ingredients for our Creamy Zucchini Chicken Bake:

  • Chicken
  • Zucchini
  • Mixture for Dry Stuffing
  • Butter
  • Soup with cream of chicken
  • yogurt with sour cream

To prepare our Creamy Zucchini Chicken Bake, follow these steps:

Preheat the oven to 350 degrees Fahrenheit.

Next, oil and put aside a 9 x 13 baking dish.

1 stick butter (1/2 cup) melted in a medium mixing bowl Crush two ritz cracker sleeves, then combine both crumbled ritz cracker sleeves in the melted butter.

Shred or dice the cooked chicken and dice the zucchini into bite-size pieces. In a large mixing bowl, combine the chicken, chopped zucchini, cream of chicken soup, 1/2 of the cracker mix, and sour cream.

*Reserve half of the mixture for later use as a topping for the casserole.

Spread the mixture evenly into the baking dish, then top with the reserved cracker mixture. Bake for 40 minutes, uncovered, on the center rack. The topping should have a beautiful brown color to it.

Ingredients

  • 3 cups shredded cooked chicken
  • 4 CUP ZUCCHINI, CRUMBLED (3 medium sized zucchinis)
  • 2 sachets Ritz crackers
  • 1 pound of butter
  • 1 cream of chicken soup (10.8 oz)
  • a half-cup of sour cream

Instructions

    1. Preheat the oven to 350 degrees Fahrenheit.
    2. Grease a 9-inch-by-13-inch baking dish. Melt the butter in a large mixing basin, then add both sleeves of crushed Ritz crackers and whisk well. Half of the mixture should be set aside for later use as a topping for the casserole.
    3. In a large mixing bowl, combine the shredded chicken, chopped zucchini, cream of chicken soup, half of the cracker mixture, and sour cream.
    4. Sprinkle the remaining cracker mixture evenly over the top of the mixture in your baking dish.
    5. Bake for 40 minutes, uncovered, on the center rack. The topping should have a beautiful brown color to it.
    6. Take it out and enjoy it!

Notes

* If you want to make it healthy, leave out the sour cream and replace it with plain greek yogurt.
