Taco Tuesday is a big deal around here. Taco Tuesday is much more than just an excuse to have a big, satisfying taco or two, or three . It’s also a day to celebrate our favorite food, and that includes the avocado. This may not come as a surprise, but avocado is a healthy food. It is a rich source of nutrients and has many health benefits.

For the first time ever, the avocado and taco are coming together in a very delightful way. One of the coolest things about avocados is that they are so versatile. You can eat them in every dish imaginable – from salads to sandwiches to wraps. You can even use them to make avocado butter. But, one of the best things about avocados is that they are one of the healthiest foods known to man.

I have been making easy avocado tacos for years. Basic avocado tacos are a relatively simple dish to make and my easy avocado taco recipe is one of my most popular. The other day I came up with an even easier avocado taco recipe, that is my new easy avocado taco recipe. These easy avocado tacos are made with a basic tortilla, grilled veggies and a little cheese and they can be ready in about 10 minutes. In our home, Taco Tuesday is a THING! Mexican cuisine is usually a hit with the locals. We dine at our neighborhood taco restaurant more often than I want to admit. This exciting meal was designed to amp up the taste while dialing down the tortillas in this traditional supper! The greatest thing about this dish is that the kids like it as well, and the healthy fats from the avocados make this mom very happy! Plus, look at how adorable they are!!! Food that seems to be pleasant to eat is the most enjoyable to consume.

How can you know when an avocado is ready to eat?

The first thing I look for to tell if an avocado is ripe is to look at the color. You don’t want your avocado to be too green. A nice darker color is best, but not too dark or brown. This isn’t the only thing to look at when you are choosing the best one. When you gently squeeze the avocado, make sure it also feels a little soft but not mushy. Once you purchase them a few times, you will start to get a good idea of what ripe avocados look and feel like!

Is it okay if I use any kind of meat?

Absolutely! We use either beef or ground turkey since we always have these on hand. You may certainly replace chicken or even tofu if that is your choice. When one of the options above is combined with a strong spice, such as taco seasoning, the beef taste usually takes a back seat and the hispanic flavors take center stage! So go ahead and personalize it anyway you like!

For our Avocado Taco Boats, we’ll need the following ingredients.

To create our Avocado Taco Boats, follow the steps below.

Preheat the oven to 350 degrees Fahrenheit. After that, prepare your taco meat anyway you like. We enjoy using ground beef and this spice in this dish! After that, cut your avocados in half and remove the seed. Scoop off a little portion of the avocado so we may make as large a bowl as we like. We like to fill ours to the brim!

Fill each avocado with a spoonful of your meat. The price you pay will be determined by the size of your “boat.” In each, we put approximately 1/4 cup.

After that, top each avocado with salsa. Make careful to fill it full to the brim—the more the merrier!

Place the cheese on top and put it in the oven to melt. Keep an eye on it since it won’t take long! It should take no more than 2-3 minutes.

Remove from the oven and top each boat with a dollop of sour cream. Serve right away and enjoy! Any leftovers may be kept in the refrigerator for up to three days.

  • Avocados (three)
  • 1 pound of your favorite taco meat (ground beef, chicken, carnitas)
  • 2 c. Salsa de Black Beans y Corn
  • 1 pound of cheese
  • 1 quart of sour cream

Instructions

    1. Preheat the oven to 350 degrees Fahrenheit.
    2. After that, prepare your taco meat anyway you like. We like to use ground beef and our own taco flavor in this dish.

I remember the first time I tried a taco boat.  When I think of a taco boat, I think of a giant sandwich filled with tortilla chips and beans.  But, that’s not how you eat a taco boat.  Instead of spooning the beans onto the tortilla with a spoon, you place the beans right on the tortilla.  Then, you scoop up some avocado and put it on the beans.  You can add cheese, sour cream, or whatever you want to it.  It’s pretty simple if you ask me..
