Easy Buffalo Chicken Meatballs
Buffalo chicken meatballs happen to be one of my favorite go-to meals. They are simple to make and taste amazing. They can be made with or without tomato sauce, but I prefer to use a homemade sauce made of Greek yogurt.
With this recipe, you can make the best buffalo chicken meatballs, with just 10 ingredients. They’re light, savory, and meaty. Serve with a side of steamed broccoli, and you’ll have dinner on the table in less than 30 minutes.
Although these meatballs are delicious on the side of a grilled chicken breast, they’re equally delicious when eaten on their own. This recipe is so quick and easy to put together that you’ll want to make them on a regular basis.
Our buffalo chicken dip is one of my favorite party appetizers, but when vegetables and flackers don’t cut it as dippers, these Meatballs made with buffalo chicken are the ideal replacement! To make these wonderful, tender buffalo meatballs, we sauté some vegetables and use Franks Red Hot sauce.

If you want your ball to be spicier, cut off the vegetables or increase the quantity of Franks Red Hot.

Agents of Binding
We usually receive the same question when we speak about meatballs: “What do you use to tie your meatballs?” To be honest, you don’t need a binding agent when using ground beef/pork since the fat performs the job. Binding is necessary when utilizing lean meats like chicken and turkey. When preparing meatballs, consider the following options:
- Almond and coconut flours
- Rinds of pork
- Eggs
- Parmesan Cheese, grated
We used a mix of almond flour and coconut flour in this recipe. We discovered that combining the two gave the meatballs a heartier, more moist finish!

Meatballs made with buffalo chicken
A spicy buffalo chicken meatball dish that gives your keto meal all the taste of buffalo wings!

Instructions:

Preheat the oven to 425°F and line or coat a baking sheet with parchment paper or nonstick cooking spray. Remove from the equation.

Combine the coconut oil, celery, onion, and garlic in a large pan over medium-high heat. Sauté until the onions are transparent and slightly brown. Remove the skillet from the heat and set aside to cool slightly.

Using a spatula or your hands, combine and mix the chicken, egg, Buffalo sauce, sautéed vegetables, flours, and salt in a mixing bowl. Allow 5 minutes for the flours to soak completely.

Place 16 golf ball-sized meatballs on the baking sheet that has been prepped. Bake for 15-17 minutes, or until golden brown.

Drizzle with additional Buffalo sauce if preferred, top with scallions, and serve with your favorite dressing.

It’s best to keep it in the fridge for up to 7 days in an airtight container. Microwave to reheat.
