This flavorful Easy Egg Fried Rice Recipe is composed mostly of egg, cooked cold rice, and a few additional ingredients. This simple supper dish will quickly become one of your favorites.

Ingredients

4 cups cooked cold rice (the finest rice is leftover rice)    
three eggs (scramble the eggs ahead of time and set aside.)    
3 garlic cloves, minced    
1 cup frozen mixed veggies (corn, peas, carrots, etc.)    
2 chopped green onions or cilantro    
3 tbsp. vegetable oil or olive oil for stir-frying    

Sauce for stir-frying

3–4 tablespoons soy sauce for flavour (if you can use this soy sauce it tastes better)    
1 tblsp sesame seed oil    
sugar (one spoonful)    
Combine the stir fry ingredients in a dish and put aside.    

Easy Egg Fried Rice Recipe Instructions

  1. 3 T vegetable oil, heated in a hot wok on medium heat
  2. Stir in the garlic and cook until it becomes brown.
  3. Stir in the frozen veggies and cook until they are heated.
  4. Now add the rice and stir thoroughly to combine with the veggies.
  5. When the rice is heated, rapidly toss in the stir fry sauce to prevent the rice from sticking to the bottom of the pan.
  6. Stir in the green onions and scrambled eggs, then remove from the heat.

Serve hot or heated with soy sauce and black or white pepper, if desired.
