    In a deep saucepan, melt the butter with the remaining tablespoon of oil and add the chopped onions. Cook, turning occasionally, over a very low heat until the onions are tender but not browned. This will take around 40–45 minutes, maybe a little more; don’t hurry it; slow-cooked onions have an amazing depth of flavor, and that is the key to success in this basic recipe. As the onions cook in a thick, dense layer, a deep pot helps keep them from burning.

    Preheat the oven to 240°C/220°C Fan/Gas Mark 9 (240°C/220°C Fan/Gas Mark 9). Stretch and roll each piece of dough into a thin disc approximately 22–24cm in diameter. Place each on a baking tray (if you don’t have four, place them on separate sheets of baking parchment to slide onto trays to bake in shifts). Season each base with salt, pepper, and a liberal pinch of fresh nutmeg before topping with a couple of tablespoons of crème fraîche. Spoon spoonfuls of sautéed onions onto each base, then top with lardons. Finally, top with grated Gruyère cheese and bake in a high oven, in batches if required, for 12–14 minutes, or until the base is crisp and the cheese is golden and bubbling.

    Serve just out of the oven, garnished with chopped chives, although this is also delicious at room temperature or even chilled.
