Ingredients

  • Pieces of grilled chicken breast
  • 1/2 cup diced fresh tomatoes
  • 1 tablespoon coriander
  • 2 tablespoons green onions, chopped
  • 1 wheat tortilla, big
  • 1/2 cup Mexican cheese, shredded
  • Brush tortillas with olive oil.

Preheat your George Foreman Grill with the lid closed for 5 minutes. If your grill has temperature controls, use the high settings.

Step 2

Place the tortilla on a flat surface and spread it out. Only half of the tortilla should be covered with cheese, and the rest should be filled with chicken, green onions, cilantro, and tomatoes. Brush the top and bottom of the tortilla with olive oil before folding the second half over the cheese and chicken.

Grill for 4-6 minutes, or until the cheese has melted and the tortilla has become golden brown.
