In this keto chicken cacciatore recipe, you’ll be using chicken thighs, mushrooms, and onions. With only 10g net carbs per serving, you can have a hearty meal without worrying about the carbs.

My mom used to make Chicken Cacciatore for us on Sunday nights when we were growing up. This was a favorite meal of mine and by far one of her most time consuming dishes. I always loved how it was super easy to make and only required a few ingredients. Since I started the keto diet, I’ve been on the lookout for new recipes that are keto friendly. I have been considering making this chicken dish for a while, and this weekend I finally decided to make it.

Is Chicken Cacciatore a Keto Approved Recipe?

Yes! Simply follow the steps outlined in the recipe card below. And the classic cacciatore chicken, which I previously published a few days ago (check it out), has a lot of carbohydrates (about 30-40 grams).

However, the dish we were preparing today is completely keto-friendly!

Crock Pot Chicken Cacciatore Low Carb

  • Using salt and pepper, season the chicken thighs/breasts (both sides).
  • Using a tablespoon of oil, heat a pan over medium-high heat.
  • Sear the chicken for a few minutes on each side until brown (make sure not to fully cook the chicken).
  • Place the chicken in the slow cooker after removing it from the pan.
  • Add a little more oil to the pan, along with the shallots and garlic, and cook for 7 to 10 minutes, or until the shallots and garlic are browned.
  • Toss in the tomatoes, thyme, oregano, fish sauce, tomato puree, and vinegar, and mix everything together until everything is thoroughly blended.
  • In the slow cooker, pour it all over the chicken.
  • Cook on high for 3 to 4 hours or low for 6 to 8 hours, covered.
  • Add the olives after opening the lid.
  • Serve!

Is it possible to make this Best Keto Chicken Cacciatore ahead of time?

Yes, you can do both at the same time! Make the recipe as directed above and then store it in an airtight container in the refrigerator. Reheat on the stovetop or in the microwave when ready to eat.

Alternatively, you may prepare the vegetables ahead of time and keep them in the refrigerator, then combine them with the chicken in the slow cooker when ready.

Instant Pot Keto Chicken Cacciatore

  • Season the chicken on both sides with salt and pepper.
  • Set the instant pot to the sauté setting.
  • Sear the chicken in olive oil for a few minutes or until browned, then transfer to a dish.
  • Return the inner pot to the pot and add additional oil.
  • Garlic, shallots, diced tomatoes, tomato puree, basil, oregano, thyme, salt, and black pepper are all added to the pot. Cook for a few minutes on a skillet.
  • Return the chicken to the pot. Set the timer for 10 minutes after securing the cover.
  • Do a fast release after 10 minutes, open the top, and add the olives. Serve!

What Should You Serve With This Low-Carb Chicken Cacciatore?

This goes well with cauliflower rice, zucchini noodles, or a healthy salad. This meal goes well with roasted radishes, broccoli, brussels sprouts, or keto garlic bread.

Important Reminders

  • If you don’t have any chicken thighs on hand, chicken breast may simply be substituted.
  • If you want a thicker stew, add the xanthan gum after it’s finished simmering and cook for another 4-5 minutes, or until it thickens.
  • If you don’t want to add the basil at the end, put it in the pan while you’re adding the spices.

Ingredients

  • 4 big skinless chicken thighs
  • 2 tbsp extra virgin olive oil
  • 2 tablespoons chopped shallots
  • 1 sliced garlic clove
  • 2 tbsp pureed tomatoes
  • 1 large diced tomato
  • 1 cup heated chicken stock
  • 1 tbsp vinegar (rice)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 4 anchovy fillets or a tablespoon of fish sauce
  • 2 tbsp basil leaves (chopped)
  • a quarter teaspoon of salt
  • a quarter teaspoon of black pepper
  • a third of a cup of black olives

Instructions

  1. Over medium-high heat, heat a big pan. 1 tblsp. extra virgin olive oil
  2. Cook for a few minutes until the chicken thighs are well browned. Place the chicken on a dish and put it aside.
  3. Sauté the diced shallots and garlic in the remaining oil.
  4. Stir in the anchovy fillets until they are completely melted.
  5. Combine the thyme, oregano, tomato puree, chopped tomato, and vinegar in a mixing bowl. Toss everything together until it’s thoroughly mixed.
  6. Return the chicken to the pan and swirl to coat it in the sauce.
  7. Stir in the chicken stock well. Bring the sauce to a boil and then reduce to a low heat for 30 minutes.
  8. Stir in the olives once it’s finished boiling and simmer for another 15 minutes, or until the sauce thickens and the chicken is completely cooked.
  9. Serve over zucchini noodles or cauliflower rice, garnished with fresh basil.
