You shouldn’t be left wanting more after a fast and simple keto dinner. This pan-fried chicken with a traditional and colorful trio of low-carb vegetables is not only quick and easy to make, but it’s also quite filling. Your stomach will thank you.

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).

  2. In a roasting pan, place the veggies. Season the veggies with salt, pepper, and rosemary. Pour the olive oil over the top and whisk to coat evenly.

  3. Bake for 20 minutes, or until lightly browned veggies.

  4. In a large frying pan, heat the olive oil or butter over medium heat. Season the chicken with salt and pepper and cook for approximately 20 minutes, or until it reaches 165°F (74°C) internal temperature.

  5. Platter the chicken and roasted veggies on a plate, then put the herb butter on top for more flavor.
