Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a plate with paper towels and butter or oil a 9″x13″ (23×33 cm) baking dish. Remove from the equation.

  2. In a chilly frying pan or skillet, add chopped bacon. Cook, tossing periodically, for 10 minutes or until crispy over medium heat. Transfer the bacon to paper towels with a slotted spoon, and keep the bacon grease in the pan.

  3. Cook for one minute, or until the spinach is slightly wilted, in the bacon grease. Remove the pan from the heat.

  4. Combine the eggs, bacon, spinach (including bacon fat from the skillet), chives, salt, and pepper in a medium-sized mixing bowl.

  5. Pour the egg mixture into the baking dish(es) and bake for 10-15 minutes, or until lightly browned and set, on the middle oven rack.

  6. Allow it cool for a few minutes before slicing and serving.
