Keto Italian Meatballs with Mozzarella Cheese

I’m excited to try this recipe for meatballs on my blog. I haven’t tried it out yet since I don’t own a panini press, and the accompanying sauce in the recipe calls for pancetta, which I don’t have. So I’m going to have to go out to buy some (I’m not sure how much I’ll cost either, I’ll do the math later), and I’ll update my blog post when I make it.

This is a low carb version of classic Italian meatballs. It’s really easy to make, so you don’t have to be in the kitchen for hours, and it’s high in protein and low in carbs. You can use ground meat or ground beef to make these meatballs, but I prefer to use pork. It’s leaner than beef and is easier to digest. If you use ground pork, just add about half the amount of water to the meat mixture and the rest can be water.

Meatballs are an all-time favorite in my house. Growing up with a family of Italian descent, we knew that meatballs were a family staple. We all enjoyed meatballs made with meat, egg, and breadcrumbs, and no one seemed to have any objection to them.

Instructions

  1. In a mixing bowl, combine the ground beef, parmesan cheese, egg, salt, and spices. Make meatballs out of the mixture, approximately 1 oz (30 grams) apiece. It’s easier to shape the balls if your hands are moist.

  2. In a large pan, heat the olive oil and cook the meatballs until golden brown on both sides.

  3. Reduce the heat to low and stir in the canned tomatoes. Allow for a 15-minute simmer, stirring every couple of minutes. To taste, season with salt and pepper. Stir in the parsley. This is the moment at which you may freeze the dish.

  4. In a second frying pan, melt the butter and cook the spinach for 1-2 minutes, stirring constantly. To taste, season with salt and pepper. Toss the spinach into the meatballs and mix well.

  5. Serve with a sprinkling of shredded mozzarella cheese on top.

 

Make sure you use the right ingredients for the right dish! For example, if you need a recipe to make a meatball, don’t use wheat flour since it is not keto friendly. If the recipe calls for cheese, make sure it’s mozzarella or none of that processed low-fat stuff. Use a high fat ingredient like butter to fry the meatballs, which will give them that crispy finish.
