If I had to choose just one criteria to determine why a meal or recipe is the greatest, I would choose nutritional value above flavor. Maybe it’s just me, but the nutrients in this beef stew is unbeatable. It’s low-carb, but it doesn’t feel like it’s low-carb or unsatisfactory!
When I think of stew, I think of hearty (and chilly winter evenings, but that’s beside the point), so when I made this stew, I really had to think about what would make it the greatest not just nutritionally, but also in terms of taste.
I needed to come up with the ideal recipe that had the greatest nutrition, taste, and wasn’t ridiculously loaded with additives. I was successful, and I’ll explain why later.

What’s the Best Way to Thicken Beef Stew?
I should mention that Matthew and I are big believers in the phrase “if it matches your macros,” so although some of you may argue that carrots aren’t keto, we disagree. We used carrots and radishes (yes, radishes) as the veggies in our Low-Carb Beef Stew. You should start cooking with radishes right now if you haven’t already. In this beef stew dish, they offered the ideal ratio of starchy to meaty to stewy. We utilized xanthan gum for the “roux” component, which is one of our favorites!

Low Carb Beef Stew

Instructions:

Set aside the short ribs, which have been chopped into bite-sized pieces and seasoned with salt and pepper.

Heat the coconut oil in a large saucepan over medium-high heat. Brown the short ribs on both sides. Remove the pan from the heat and put it aside.

Mince garlic and chop onions, carrots, and radishes into bite-size pieces.

Cook down the onions, garlic, and butter for a few minutes, scraping the bottom with a spatula/spoon.

When the onions are soft, add the broth and stir to incorporate. Combine the xanthan gum with the other ingredients.

Allow the broth mixture to come to a boil before adding the meat and cooking for 30 minutes with the cover on. Scrape down the sides of the pan as you stir.

Cook for a further thirty minutes, stirring regularly, after adding the carrots and radishes after thirty minutes. At this time, the broth should have thickened somewhat. You may add additional broth or water if you believe it’s necessary.
