I didn’t believe it was feasible at first, and I didn’t think I could get beyond the earthy chia seed flavor that I dislike.   • Heat the stock in a heavy-bottomed sauce pan over medium heat. Allow the stock to decrease to half its original volume.

  • Pulse the chia seeds in a coffee grinder until finely pulverized as the broth reduces. Remove from the equation.

  • Remove the reduced broth from the heat and whisk together the crushed chia seeds, heavy cream, garlic powder, salt, and pepper.

  • Allow 5-10 minutes for the sauce to thicken.

  • Whisk together the butter and Parmesan cheese. Return the mixture to the stovetop over low heat if it is no longer hot, and allow the butter and cheese to melt.

  • Serve right away and enjoy!
