Mexican Chicken Salad

Chicken is one of my favorite meat options to eat, and this chicken salad is super yummy. It’s quick to make, so you can have a quick lunch at your desk, and it’s a great recipe for those who don’t want to deal with cooking chicken from scratch.

The traditional Mexican chicken salad recipe calls for grilling some chicken breasts, chopping them up into pieces and then adding to a bowl, but with a twist. Instead of using chicken breasts, I use boneless, skinless chicken thighs, and I chop them up into bite-sized pieces instead of mincing them into small pieces. I also add some celery, some onion, some cilantro, and some mayonnaise to the bowl and then I add some tortilla chips to the top.

We’re not sure if the recipe is traditional, but we’re sure it’s a winner. You can never go wrong with a Mexican Chicken Salad, especially when it’s made with a light, fresh dressing and served with fresh fruit. We’ve taken the traditional chicken salad and turned it into a light, fresh salad that’s perfect for a spring or summer dinner.

Is it necessary for me to use mayonnaise?

You don’t have it! We utilize it for a variety of purposes. For starters, it makes this meal dairy-free for people with dairy sensitivities. When mixed with the taco seasoning, it also has a very nice and creamy flavor. Finally, we believe that once completely mixed, mayonnaise does an excellent job of keeping all of the components together. Sour cream is a fantastic alternative that we suggest!

Is it possible to eat this chicken salad hot?

It’s possible! This recipe calls for cold or room temperature ingredients, but that doesn’t mean you have to eat it that way! For a tasty quesadilla, we cooked this baby up with melted cheese and tortillas. It’s delicious over a bed of lettuce leaves or warmed up on top of cheese nachos. The possibilities are really limitless, and it is entirely up to you.

The following are the ingredients for our Mexican Chicken Salad:

  • Chicken
  • Beans, black
  • Cilantro
  • Juice of Lime
  • Corn that is yellow in color
  • Tomatoes
  • Mayonnaise is a kind of mayonnaise that is (or Sour Cream)
  • Seasoning for tacos

To prepare our Mexican Chicken Salad, follow these steps:

Preparing all of our components is the initial stage. Drain and rinse the black beans and corn before transferring them to other dishes. Next, coarsely chop the cilantro and quarter the cherry tomatoes. Last but not least, cut the cooked chicken into tiny bite-size pieces.

In a mixing dish, add the following ingredients and whisk to incorporate:

  • 2 cups cooked diced chicken
  • corn, 1/3 cup
  • a quarter cup of cilantro
  • a third of a cup of chopped tomatoes
  • black beans, 1/3 cup

After that, squeeze out as much juice as you can from the lime. This tool is one of our favorites since it makes juicing so simple and affordable!

Mix the taco spice with the mayonnaise in a small bowl (or your sour cream.) It’s simple to switch between the two components. I have a buddy who is allergic to mayonnaise, so I usually use sour cream instead. Because the taco seasoning takes over with its taste, you may use it in place of the taco seasoning.

It may seem that the proportions in this combination are wrong. It is, without a doubt, accurate!

  • 2 tbsp. taco seasoning

Serve and have fun! Our favorite way to eat this salad is on a wheat tortilla, but our kids like it on ciabatta bread!

Ingredients

  • 2 cups cooked and diced chicken
  • 1/3 cup drained black beans
  • 1/3 cup drained yellow corn
  • 1/3 cup chopped tomatoes
  • 1/4 cup chopped cilantro
  • 1 lime, freshly squeezed
  • Mayonnaise, 1/3 cup
  • taco seasoning (2 tblsp)

Instructions

  1. Set aside rinsed and drained black beans and corn.
  2. Tomatoes, cilantro, and cooked chicken should all be chopped.
  3. In a large mixing basin, combine the chicken, tomatoes, black beans, corn, and cilantro.
  4. 1 lime juice poured over the chicken mixture, stirred.
  5. Combine the mayonnaise and taco spice in a small bowl. To thoroughly mix, stir everything together.
  6. Stir the mayonnaise mixture well into the chicken mixture.
  7. Serve!
